Since the beginning of summer will be here before we know it… and it’s already feeling like it, I’ve collaborated with a bunch of other bloggers, and we’re sharing over 50 new recipes for the summer.
I’ve decided to stick with my seafood theme, and make some little crostinis with crab, bacon, and guacamole. I’ve been on such a guac kick lately.. I like to keep ripe avocados in the house in case I ever get the craving. You may (of course) use store bought guacamole here, but I just love making my own (and I had plenty left over in this recipe for snacking!)
This recipe is somewhat inspired by a sandwich listed on Alabama’s Top 100 Dishes to Eat Before You Die. One of our favorite spots in Auburn was a place called Amsterdam Cafe. It was downtown, so we really didn’t go much, but when we did, my roommate would order the Crab Cake & Avocado Sandwich.
Since, of course, I was picky back in the day, I never ordered it. Avocado scared me back then. But since, I’ve tasted the sandwich and it’s delish!.
Here, I’ve taken the crab + avocado combo and combined that with crispy bacon and a crostini. The flavors and textures were all perfect. And they’re little mini-bites, but the flavors are huge!

- (You will have leftover guacamole, but that’s never a bad thing). Mix all ingredients together except for the avocados. Cut avocados into 3/4 -inch pieces and scoop into mix. Mash together with everything else until just incorporated.
- Whisk together dijon mustard, Worcestershire, sherry vinegar, Sriracha and white pepper. Stir in crab until just combined.
- Top crostini with a small spread of guacamole, then the bacon, then the crab salad. Garnish with sliced green onions.
